And so it begins . . .

On Saturday I headed down to ICE (the Institute of Culinary Education) to get my vouchers for equipment, fitted for my uniforms and get really nervous about the next 9 months.

Basically I feel like I am giving birth . . . to myself.

For years and YEARS I have loved cooking and I have finally (with a GREAT BIG push from my wife Amanda) taken the step to learn MORE!

I think I am pretty damn good, but a little knowledge goes a long way. Let's see what a LOT of knowledge gets me.

If you decide to stop by here to check out my progress I will be posting here after every weekend class that I have and maybe some stuff in between too! Like TopChef, Alton Brown, My Recipes and all that good stuff.
